Happy Earth Day!

Earth Day is an annual event, celebrated on April 22, on which day events worldwide are held to demonstrate support for environmental protection.

Most folks think of today as an day to protest climate change and greenhouse emissions.

Taking a different approach this year, I want to bring attention to the impact on the environment caused by food waste. According to reports, almost 40% of food in the US is thrown away. Think of the amount of water and resources used to farm all kinds of food only to be thrown away?

Just Eat It is a documentary that follows one couple's attempt to stop wasting food, and as such, wasting resources.

Trailer description:

Filmmakers and food lovers Jen and Grant dive into the issue of waste from farm, through retail, all the way to the back of their own fridge.

After catching a glimpse of the billions of dollars of good food that is tossed each year in North America, they pledge to quit grocery shopping cold turkey and survive only on foods that would otherwise be thrown away.

In a nation where one in 10 people is food insecure, the images they capture of squandered groceries are both shocking and strangely compelling.

You can watch the documentary tonight on MSNBC at 10PM.
